Oktoberfest

Es ist gerade wieder Wetterpause, so schaffen wir es doch noch auf ein Oktoberfest. Ich habe mir extra Lederhose und andere "Devotionalien" aus meiner Heimat mitgebracht. Mal schauen, i gfrei mi auf jeden Fall scho sackrisch!   Caused by the bad weather we have the unexpected chance to attend the Oktoberfest in the austrian club tonight. I am really excited about it and i am happy that i can wear my traditonal costume, i brought from my hometown in Bavaria. Leather pants and things like that.

Ja, ich habe es versaut! / Yes, i messed it up!


Nachdem ich diese ständigen Sticheleien "Wann schreibst Du's denn endlich, ha? Sag's doch endlich! Gibst Du's jetzt etwa nicht zu etc," satt habe, bekenne ich Farbe. Ich gebe zu, es fällt mir schon ein wenig schwer, steckte doch viel Mühe und Arbeit darin, ein bisschen peinlich ist es auch, Auszeichnung wird es jetzt auch keine geben, prahlen fällt ins Wasser, aber es hilft nichts, darum hier mein Geständnis: Ja, ich habe es versaut. Ich habe den Thanksgivingtruthahn versaut, ich habe versagt und ordentlich versalzen, 40 Dollar glücklicher Bio-Truthahn plus Zutaten und Herstellungskosten für die Tonne!
Wie? Es gibt nur Theorien, aber wahrscheinlich war es so: In dem tollen Rezept von dem Grillhersteller steht: Truthahn in eine Salzlake mit so viel Salz über Nacht einlegen, dass ein rohes Ei schwerelos zu schwimmen scheint. Was soll ich sagen, das Sch...Ei schwamm auch nach einem halben Kilo Salz noch nicht. Egal, wir schon nicht passieren. Getauchten Vogel über Nacht in der Lake stehen lassen, dann trocken tupfen und vorsichtig die Haut so weit wie möglich vom Fleisch lösen und "Blue Mountain Turkey Rub" großzügig dazwischen schmieren. "Blue Mountain Turkey Rub"? Was ist denn das für ein Dreck? Hab ich nicht, wird aber auch nicht so schwer sein eine Alternative zu finden! Im Internet hab ich dann eine lecker klingende "zwischen Haut-und-Fleisch-Schmiere" gefunden, die aus Kräutern und Salz und Knoblauch etc. bestand. Warum man das unter die Haut tun muss? Weil die Haut angeblich wie ein Isolator wirkt und nur so der Geschmack (und wie sich später herausstellt auch das Salz) richtig ins Fleisch eindringen kann. 8 Stunden bei 85°C Räuchern, einmal stündlich mit Apfelsaft besprayen und dann noch 15min pro pound bei 160°C das waren fast noch mal drei Stunden. Dann der große Moment! Fast, denn noch eine halbe Stunde in Alu-Folie ruhen lassen. Aber dann: der große Moment! Vogel angeschnitten, fällt auseinander wie Butter! Das zarte Fleisch ist ein Gedicht!! Aber... der schmeckt so salzig!!! Und dann schmeckte auf einmal alles nur noch salzig! Semmelknödel, Wein, Bier, Gemüse! Wir haben alle probiert, sind fast verreckt vor Salz! Nachts dreimal aufstehen und gierig drei Liter Wasser in den Blutkreislauf einpumpen! Morgens hatte ich Blutdruck 112 zu 175 von dem vielen Salz-Dreck!
Aber, es ist auch immer noch ein wenig Schwabe in mir und der Vogel war teuer, also gibt es täglich ein bis zweimal Sandwich mit Truthahnscheiben, da ist es nämlich gerade so erträglich.

Now it is enough, getting constant teased with words like "When do you publish it finally then, eh? Why don't you tell it? and so on" i have enough, I confess to color. I admit it is not really easy, because it was a lot of work and it is a bit emberrassing and i will get no award, but it does not help, so here's my confession: Yes, I ruined it. I messed the thanksgiving turkey, I have failed and oversalted a $ 40 happy organic turkey, plus ingredients and manufacturing costs, all garbage!
How? There are only theories, but it was probably this: In the great recipe book  from the barbeque manufacturer: submerge turkey in a brine overnight loaded with so much salt, that a raw egg seems to float weightless. What should I say the egg did not float damn sch ... even after half a kilo of salt, yet. Soak the bird overnight, then pat dry and gently dissolve as much skin as possible from the meat and put "Blue Mountain Turkey Rub generously between. "Blue Mountain Turkey Rub"? What is this shit for? So i did not have any, but i thought it would not be that difficult to find an alternative! On the Internet then I've got a delicious-sounding "between skin and meat-rub, which consisted of herbs and garlic, and salt. Why do you have to rub it under the skin? Allegedly because the skin acts as an insulator and only (so the flavor and as it turns out the salt) can really penetrate the meat. 8 hours at 85 ° C smoking, even hourly spraying with apple juice and then another 15 minutes per pound at 160 ° C was almost three hours till it was done. Then the big moment! Almost, because half an hour tolet it rest in aluminum-foil. But then, the big moment! The meat almost like butter! The tender meat is a poem! But ... The taste was so salty! And then suddenly everything just tasted salty! Dumplings, wine, beer, vegetables! We have tried all, nearly perished from salt! At night, get up three times and three liters of water pumping greedily into the blood stream! In the morning I had blood pressure 112 to 175 of the many salt!
But it's still a little Schwabe in me and the bird was expensive, so there's a daily or twice sandwich with turkey slices, since it is in fact just bearable.

Happy Thanksgiving

Heute (Montag) ist das kanadische Thanksgiving. Wir haben Thanksgiving schon immer in Deutschland gefeiert - und zwar in Landshut mit Sabsis Freunden - bis auf einmal in unserer "Räuberhöhle" in Wilhelmskirch. Allerdings haben wir es in Deutschland meistens nach dem amerikanischen Datum gefeiert, das ein wenig später ist. Auf jeden Fall waren es immer tolle Ereignisse, an die ich mich gerne zurück erinnere. Große, festlich gedeckte Tafeln, Menschen, die man gerne mag und die sich fast wie an Weihnachten einmal im Jahr Zeit nehmen sich zu treffen und sich auszutauschen. Das Essen war immer super lecker, Gastgeber Ulli und Heinz liefen immer auf Hochtouren und wer nicht bis zum platzen gefüllt war, war schlicht und einfach nicht dabei. Semmelknödelfüllung, Esskastanien, ein brauner lecker glänzender Truthahn, Stimmengewirr, Lachen und mit den Jahren auch Kinderbrabbeln. Jeder hatte etwas zu erzählen, was er so im Laufe des Jahres erlebt hatte. Ein gemütlicher Kaminofen mit einem knackenden Feuer, ein gutes Glas Rotwein, die Zeit, die bei Ulli und Heinz für einen Abend stehen zu  bleiben schien und doch viel zu schnell verging. Ja, ich erinnere mich gerne daran und vielleicht auch mit ein bisschen Wehmut, weil es schwer ist solche Freunde zu finden und so feiern wir morgen allein.
Wie wir unseren Truthahn machen, das beschreibe ich Euch im Laufe des Tages. Bis jetzt haben wir Ihn aufgetaut (Kampfgewicht 6,115 kg) und wie ich ja früher schon mal geschrieben habe, hab ich jetzt einen Pellets-Grill, für den es auch ein spannendes Rezept gibt. Gesamtgarzeit beträgt geschätzte 9 Stunden, mal schauen ob es das Wert wird. Im Moment ruht der Truthahn bis morgen früh in einer Salzlake mit etwas braunem Zucker.
Today (Monday) is the Canadian Thanksgiving. We have always celebrated Thanksgiving in Germany - in Landshut, with my wifes friends - except for once in our "den of robbers" in Wilhelmskirch. However, we have celebrated in Germany, mostly to the American date that is a little later. In any case, it was always great events to which I am happy to remember back. Large, festively decorated tables, happy people, and almost like Christmas once a year, take time to meet and exchange thoughts. The food was always super tasty, and  the hosts Heinz and Ulli always ran at full speed and who was not filled to bursting, was simply not there. Dumplings stuffing, chestnuts, a brown shiny tasty turkey, voices, laughter, and with the years, giggling childs. Everyone had something to tell what happend to him during the year. A cozy fireplace with a crackling fire, a good glass of red wine, the time seemed to stand still at Heinz and Ulli for an evening, and nevertheless all time went by to quick. Yes, I remember with melancholy, and maybe with a bit of sadness because it is difficult to find such friends, and so tomorrow we are celebrating alone. 
How the turkey will be done i will describe you through the day. So far we have thawed him (fighting weight of 6.115 kilograms) and as I've written before I've got a pellet grill now, for which there is an exciting recipe for cooking turkey. Total cooking time is an estimated 9 hours, we'll see if it is worth the labour. At the moment the turkey rests until tomorrow morning in a brine with a little brown sugar.

Schnee / Snow

Es ist also passiert, der erste Schnee. Vorgestern hat es schon -1°C gehabt und gestern Abend kam dann noch der passende Schnee dazu. Es wird also Winter!
Wir haben die Ernte nicht ganz geschafft, da es seit Tagen immer wieder regnet. Wir haben noch ca. 1000 acre draußen, aber das wird wohl Futterweizen werden. Wenn ich ein bisschen ausgeruht bin gibt es wieder mehr.

So it finally happend, the first snow! On Tuesday we already had -1°C and last night we had snow. So we get winter!
The harvest is not finished yet, because of rain since a couple days. We still have 1000 acres left but i think this will be feedgrain. When i got time to relax a bit i will let you know more.
